Cranberry Jalapeno Relish

Ingredients
1 pound fresh (or frozen, thawed) cranberries
2 medium oranges, peeled, sectioned, and roughly chopped
1 1/2 teaspoons finely grated orange zest
2 jalapenos, seeded and chopped
3/4 cups sugar
1 1/2 teaspoons chopped fresh mint leaves

Directions

Combine half of the oranges, jalapenos, and the orange zest in a food processor and pulse three times, add sugar and pulse until chopped until fine (think relish or cole slaw sized as your goal). Add cranberries and pulse until they get just slightly chopped (about halved in size). Scrape mixture into a bowl , add remaining oranges and mint. Cover and place in refrigerator for at least 1 hour and up to 2 days to meld the flavors. Serve at room temp or chilled
